sweet 'n sour

Sometimes, plain ole dill pickles get pretty boring. And if you have some one in your household who loves sweet 'n sour this is a good recipe.

sweet sliced dills
4 lbs of cucumbers
6 medium onions

-wash cucumbers, slice off and discard the blossom ends. Cut into 1/4 inch slices.
-slice the onions thinly and mix with the sliced cucumbers, set aside.

-mix together in a large stainless pot the following:
4 cups sugar
4 cups white vinegar
1 cup water
1/2 cup pickling salt

-bring to a boil. Add sliced cucumbers and onions to the pickling liquid and return mixture a full boil.

this is what it looks like after it has come to a boil.

-sterilize 5 (500 ml) pints. To each pint add a garlic glove and 1 head of dill.

-pack cucumber and onion slices to within 3/4 inch of top rim. Add pickling liquid to cover cucumbers to within 1/2 inch of top rim. Remove air bubbles with a spatula, readjust head space to 1/2 inch. Wipe jar rim removing any stickiness. Centre your lids and rip and finger tighten. Place jars in canner.

-cover canner; return water to a boil; process for about 10 minutes. Remove, and cool for 24 hours.

These are so yummy. My grand-daughters really enjoy these.
